It seems no matter what I do, when I have typed out my blog and made sure there are spaces between the paragraphs, when I post it, there are no spaces there. How can I fix this?

You may want to check your "Convert line breaks" setting. Go to Settings - Formatting, and set "Convert line breaks" to "Yes".
